I used to get excited about new OS releases. I happily shelled out for Snow Leopard and Lion. Then in 2018 or so, my Mac Mini suddenly decided to put everything on iCloud and I couldn’t stop the syncing process until it had concluded and that was it for me.

I literally have no idea what you’re on about. A friend of mine is still using their iPhone 6 running ios 12. Nobody is forcing you to update stuff

I have this damn iPhone 12 or 14 I dunno what it is.

It doesn’t do anything I want. It always changes.

All the apps stop working and I have to manually update them constantly because I have auto updates off.

My os updates on its own after me telling it not to. At some point it just does it.

That is what I am on about

You literally, and I do not mean this in a non-literal sense, but you literally accepted and gave them the capability of doing this when you accepted the terms and conditions. If you did not like those terms and conditions, there are literally hundreds of completely open source options at the ready that would be amazing products to support with your funding/wallet.
