If one day I want to work in place that share my distrust to cetralized tech monopolies, where should I be? How to build my connections?

If you work in tech in Europe, lots of people are already on mastodon.
#fedihire hashtag on Mastodon is as close as it gets.
This probably won't help you, but there was Flockingbird. However its attempt to index Mastodon's job offers ended up in drama as Mastodon generally does not like being indexed...
Just use Mastodon.
Search for tech coops, quite a few seem to be popping up recently. I’m not directly in tech and still haven’t found who I’d really love to work for, so I can’t help much, but it’s a lovely question and I’m curious about other people’s answers!
It’s not a Federated platform like LinkedIn, but I am working on CareerCupid , a “OkCupid for jobs” website where people can answer questions about their values and goals, and then find out people that are the most compatible to work with. The website does work with ActivityPub though, you can follow @thecupid@cupid.careers and you can see the new polls and job listings published on the website.
HrCupid was taken?
.
Fair enough.
Nope. There is none as I'm aware off.
You mean like LockedOut?
