The site also has pages for keeping track of what has been delisted from specific vendors, such as Steam, Epic or GOG for PC

This site is amazing. It even has an option to list all games for a particular platform in a single page (here for Steam): delistedgames.com/all-delisted-steam-games/

Lots of surprises on that list and plenty of titles I haven’t thought about in years. The majority of delisted games are pretty obvious though: License (to cars, planes, music, IPs, etc.) expired -> game delisted.
