So a way to remove ads at the cost of $ and better tracking. Instead, I’ll stick with piped, greyjay, ublock, etc and make it harder to track me and save the $.

I have no problem paying, just let me use my app of choice, without ads, and don’t track me. If YouTube did that, I’d be a paying customer instead of a leech. I pay for Nebula and watch on Grayjay, so I do put my money where my mouth is.

Didn’t they already have this before but removed it? At least in my country a “lite”-variant was available but they removed it like last year.

And that’s why I sideload a modified YouTube that includes ad blockers, sponsor segment skipping and background playback, among other things.
I won’t pay for YouTube almost solely because Revanced is such a better experience than YT could be. They cannot bundle in Sponsor block without an outrage.
I feel the battle will get harder for extractor like NewPipe. I really hope NewPipe will always work despite Google constantly changing their YouTube code.

YouTube Music Premium costs $10.99, while YouTube Premium is $13.99. It remains to be seen how much cheaper YouTube Premium Lite

I don’t disagree, but Premium does let you skip over frequently skipped sections.
Oh I didn’t know that. That admittedly changes things somewhat. Google still makes enough money from me though.
